Avocado Oil Mayonnaise

Mayo doesn’t have to be bad for you! Sure, if you buy Kraft or even any of the organic brands, you’ll be loading yourself up with artery-damaging free radicals and enough omega-6s to crowd out a whole cod liver of omega-3: even the organic brands are made with soy or canola oil. But making it at home is so much easier than you think, and presto – delicious healthy indulgence!

You’ll need:

1 whole egg plus 1 egg yolk
a capful of apple cider vinegar
a splash of juice from Real Pickles brand sauerkraut (it makes your mayo probiotic!)
salt and pepper (sometimes also lemon peel, or crushed red pepper, and/or seaweed…)
one bottle of 365 brand avocado oil

Add everything EXCEPT the oil to your blender, and blend it well. then slowly add in one whole bottle of Whole Foods brand avocado oil (the whole bottle is the right ratio with the stuff above). Eventually it’ll start to gurgle and thicken. After the whole bottle is in, I take the lid off the blender and stir a little with a
knife to work any remaining oil down into the blender mechanism (while the blender is still running. which is hazardous!) and then it’s done! That’s all there is to it!
And because of the probiotic bacteria in the sauerkraut juice, you never have to worry about this mayo going bad at your cookout!

    We do not have a whole foods store here so I can’t purchase the recommended Avocado Oil. Could you please tell me the size bottle,( wt in oz) required?
